( makes 18-19 mini cupcakes )
Ingredients :
Cupcakes :
50ml milk
20ml corn oil
10g sugar
60g cake flour
1/4tsp salt
3 egg yolks
1 tsp vanilla extract
3 egg whites
40g sugar
1/4tsp cream of tartar
Whipped cream frosting :
200ml whipping cream
20g icing sugar
1 tsp vanilla extreat
Method :
1. In a double boiler, whisk milk, corn oil and sugar together until mixture is warm and sugar melted.
2. Remove from heat and add in sifted cake flour and salt, whisk to mix. Add in egg yolks and vanilla extract, whisk to mix. Set aside.
3. In another mixing bowl, beat egg whites with cream of tartar until foamy. Add sugar in 3 additions and beat until stiff peak.
4. Gently fold in egg whites into yolk mixture in 3 additions to blend.
5. Scoop into cupcake liners 80% full and bake at 170C for 20 mins.
6. Whip whipping cream with icing sugar over an ice bath until stiff. Add vanilla extract and whisk to blend. Pipe as desire onto cupcakes
