[食譜分享] 芝心軟包 ~~ 老公至愛!
[Recipe Sharing] Soft Cheese Bun
份量: 12個 (相片中是雙倍份量, 做24個)
材料: 高筋粉 225g, 低筋粉 25g, 砂糖 25g, 雞蛋 25g, 鹽 4g,即發乾酵母 3g,奶粉 10g,室溫水 135g,無鹽牛油 30g
内餡: Mozzarella芝士
做法: 直接法(用機搓) + 冷藏法
1. 先量濕材料再加乾材料(牛油成團後先加)到麵包機, 選"烏龍麵模式", 搓打15分鐘後取出
2. 將麵糰用食物袋包好或放密實盒蓋好, 放雪櫃普通格(下格)24小時
3. 用前先將麵糰放回室溫30分鐘, 平均分割成12份(~40g一個)
4. 開始做型, 灑少許高筋粉, 將麵糰壓扁一點, 放入Mozzarella芝士(~7g一個), 包好成球狀擠緊收口
5. 把麵糰滾圓, 並把駁口埋到麵糰底部, 放在烤盤上
6. 再發最多30-45分鐘, 最後篩上高筋粉, 170度焗~15分鐘即成
