Regina Nutella Muffins
No electric equipment is needed just a bowl and manual handwhisk
Ingredients:
62g self-raising flour
285g Nutella
2 tbsp canola oil, olive oil or melted butter
2 eggs
2 tbsp yogurt
2 tbsp condensed milk
Chocolate chips or nuts etc for topping (optional)
Method:
1. Hand whisk Nutella, oil, eggs, yogurt and condensed milk.
2. Sift in flour & hand whisk till well blended. Taking care not to over whisk.
3. Fill muffin cups 3/4 full & bake at 180C for 15 - 20 mins.
Makes about 6 muffins
Regina's tips:
1. Bake at middle rack otherwise the muffins will burn.
2. Toothpick will be stuck with gooey bits and that's when it's ok. Anything longer will be too dry.
3. If you prefer little butter smell you may do one tablespoon canola oil and one table spoon melted butter
