500gm Rice flour
6 ½ to 7 bowl s of water (i tried both, i prefer softer with 7 bowls of water)
700-1kg of yam (i used 700gm)
2 tsp of 5 spice powder and whitepepper
2 tsp of salt (depend on how much dried shrimp u used)
2/3 bowl of chopped dried shrimp
½ bowl of minced shallots
Method :
Cut yam into small cubes. Stir fry dried shrimps, followed by shallots, then yam. Add ½ bowl of water n cook yam till 1/3 cooked. U can add additional water if it gets too dry but the outcome should look dry.
Mix rice flour, water, pepper, salt and 5 spice powder. Stir till no lumps. Add in the stir fried yam. Put into pan (low wide pan) for steaming.
When the water is boiling, stir the mixture before putting it on the steaming rack. Close the lid. Every 3 minutes, open the lid, hold the pan, give it a stir to ensure the water n flour mixed well. Repeat this 2 or 3 times. After stirring, use the back of the ladle to smoothen it back. If after the 2nd stir, the mixture seems thicken a lot n diff to stir, do not proceed with 3rd stir. Stir gently as not to break the yam to paste.
Steam on high fire for abt another 45 to an hour. Done. Garnish with stir fried shrimp, shallots, red chillies and spring onion.
