4 big eggs yolk
60ml olive oil (60g)
200ml water
115g optima flour
65g cake flour
1/4tsp salt
15 g cocoa powder
1/4 tsp bicarbonate soda
40g instant chocolate jello
1/2 tsp cho emulco optional. I did not add.
(B)
4egg whites
45g sugar
1. Put all of A ingredients in a bowl n using a ballon whisk to mix well.as long as not lumpy it is ok.
2. Whisk egg white and sugar until stiff.
3. Fold beaten egg white to jello mixture.
Bake in 8 in sq tin or 9 in round for 35 to 40 mins.
Use of sponge
1)Banana cream cake
200ml fresh cream
3 tbsp tiramisu compound
2 ripe bananas
(If no compound try adding instant coffee dissolved in some hot water.
2) turn it into a black forest cake!
3) cho fudge cake
Enless with this sponge.
Vanilla sponge
7 egg yolks large eggs
120 ml olive oil (use normal olive oil- not extra vergin ones)-(4 1/2 oz)
180ml water (6oz)
227g optima flour
130g Hong Kong flour or cake flour
1/2 tsp salt
1/2 tsp baking soda
7 egg whites (measured to 9oz)
125g sugar
1/2 tsp cream of tartar(optional)
Method
Place egg yolk, oil,water, optima flout n flour b.s ,salt into a bowl. Stir using balloon whisk until mixture is smooth.
Whisk egg whites , sugar n cream of tartar until still. (Shinny n stiff but not dry)
Add mixture into stiff egg whites and fold until mixed. Do not over mixed.
Bake at 180C for about 40 mins or until cooked. Test cake after 35 mins.
This should give you 2 x 9 inch sponge
Sponge cake........
INGREDIANTS:
4 eggs,
1/3 cup plain flour,
1.5 teaspoon baking powder,
1/3 cup sugar,
1 teaspoon vanilla essence.
DIRECTIONS:
beat egg white when it comes foamy add half sugar and again beat till it comes soft peaks foam.
now beat egg yolk with vanilla and remaining sugar until it coloured light yellow and doubled in volume.
now sift flour with baking powder,
then mix egg white with egg yolk with rubber spatula and add flour into batter and again beat for 5 minutes.
then grease cake pan with oil ( use more oil because there isn't any oil in cake batter)....
and bake for25 to 20 minutes.....

Just remember that I came across this two recipe claim to be melt in mouth sponge cake. This recipe is from scratch using plain flour http://www.joyofbaking.com/ChocolateSpongeCake.html and https://en.cookpad.com/recipe/640947 (similar with ochikeron and tried it alread)
