用麵包機制作的 釀豆腐 魚肉餡(魚膠)
超級簡單 口感一流!
纯鱼胶材料:
鲛鱼肉 500g
冰水 1 tbsp (很冷的)
盐 ¾tsp
味精 ¼ tsp (随意)
生粉 ½tbsp
鱼肉胶材料:
猪肉碎 250g
生粉 ½tbsp
冰水 ½tbsp (很冷的)
咸鱼碎 (随意)
* ½ tsp 盐 + ½碗水= 盐水
*我是用Cosway面包机
做法:
把鱼胶材料放入面包机里启动8号功能(Dough)全程14分钟完成。
纯鱼胶 : 手先沾一些盐水,取出鱼胶,在大碗中挞十来下,这样会使鱼胶更结实爽口。
鱼肉胶 :把鱼肉胶材料加进面包机再启动8号功能,搅大概6-7分钟,关电。

P/s : 购买胶鱼时必须确定能打成鱼胶的,因为胶鱼品种很多。
Fish paste:
Fish meat 500g (鲛鱼肉)
Ice water 1 tbsp

MSG ¼ tsp (Optional)
Potato starch ½tbsp
Fish & pork paste:
Mince pork 250g
Potato starch ½tbsp
Ice water ½tbsp
Salted fish (optional)
* ½ tsp salt + ½bowl of water= salt water

Put all ingredients for fish paste into BM and start the dough function NO. 8. The program takes 14 mins.
Fish paste :
put some salt water in your hands otherwise it will be very sticky, take out the mixture hit or smash(挞) in the big bowl for about 10 time. This will make the fish paste more solid and spongy.
Fish & pork paste:
Add all ingredients into the BM and start dough function No. 8 again, turn off the electricity after mixed for 6-7min. Put some salt water in your hands otherwise it will be very sticky, take out the mixture hit or smash(挞) in the big bowl for about 10 time. This will make the fish paste more solid and spongy.
