Fruitcake
700g mixed fruits and raisins
A dash of rum
300g butter
150g icing sugar
6 eggs
100g sugar
250g sifted plain flour
Baking tin:
3 17cm x 9cm baking tins (greased and lined)
Method
1. Marinate mixed fruit and raisins in rum for 24 hours
2. Lightly beat butter and icing sugar together till fluffy. Remove and set aside. Beat eggs and sugar together till fluffy. Pour into butter mixture and mix well by hand
3. Add plain flour and mixed fruits and raisins a little at a time, stirring to mix well
4. Pour cake mixture into baking tin and level surface. Bake at 160'C-180'C for 45-60 minutes. Serve.
