We all know that person who has it all. But have you ever met someone who has truly earned it all? Founder of a successful company that just celebrated 10 years of business, Mom to adorable Zelda & two sweet pups, creator of two creative blogs, & plenty more; Corri McFadden is that person. We met up with Corri to create a deliciously fun dish: birthday cake pancakes! Check out the recipe & process below, Baby Z approved.
Ingredients:
for the pancakes:
1 1/2 cups all purpose flour
1 tbsp baking powder
2 tbsp granulated sugar
1/2 cups white cake mix
1 tsp vanilla extract
1 egg
1 1/2 cups milk
3 tbsp unsalted butter, melted
rainbow sprinkles
for the frosting:
1 cup powdered sugar
1.5 tbsp milk
1/2 tsp vanilla
2 tbsp butter, melted
for toppings:
whipped cream
assorted sprinkles
Supplies:
Step 1:
Combine all pancake ingredients except sprinkles in a large bowl.
Step 2:
Stir only until smooth. Add in one tablespoon of sprinkles.
Step 3:
Place skillet on stove over low-medium heat.
Step 4:
Pour batter onto skillet with a ladle. Smooth out batter with bottom of ladle, creating a circle in an even layer. Add additional sprinkles.
Step 5:
Cook for roughly 2-3 minutes or until golden on the bottom & bubbling on top. Flip with spatula & cook for an additional 1 minutes or until golden.
Step 6:
In medium bowl, mix all frosting ingredients & drizzle over pancakes. Top with whipped cream & additional sprinkles if desired.
Step 7:
Serve & enjoy!
