for the artichokes:
250g artichoke hearts (fresh or frozen)
8 slices preserved lemon (fresh if preferred)
2 tbsp parsley (chopped)
for the marinade:
4 tbsp My Secret Kitchen Tapenade with Smoked Garlic
1 tbsp white wine vinegar
3 tbsp olive oil
1 tbsp lemon juice
Mix the marinade ingredients together. Put the artichokes and lemon slices in a bowl, add the marinade and mix well.
Cover, and microwave on full power for 4 minutes. Stir and leave to marinate for a minimum of 6 hours.
When ready to serve, sprinkle with the chopped parsley.
