120g palm sugar,grated or chopped
100g caster sugar
250g butter
3 large eggs
350g plain flour
1tsp bicarbonate of soda
200 mixed dried fruits
100g palm sugar boiled with 50ml of water then cooled
Method:
1) Beat butter, chopped palm sugar and caster sugar till creamy.
2) Add in one egg at a time and beat till well combined.
3) Mix about 180g of the sifted flour with the dried fruit.
4) Fold in the rest of the flour into the beaten butter.
5) Fold in the dried fruits.
6) Fold in the boiled palm sugar water and mix well.
7) Pour prepared batter into a 15cm cake tin lined with greased paper.
8) Steam for 3 hours or until cooked.
** this recipe was from an old magazine abt 10yrs ago...it's our fav. I will add 150g instead of 120g of palm sugar for the taste...enjoy =)
