Gula Melaka Butter cake Top with dessicated coconut. - by Jenny Lim
Recipe for 7" round tin
250g salted Butter
200g gula melaka (chopped)
100ml coconut milk
5eggs
200g cake flour
50g brown sugar
20g coconut powder
5g baking powder and
1/8tsp baking soda
Adequate shredded coconut
Method
Cook coconut milk and gula melaka till melt and set aside
Beat butter and brown sugar till light and fluffy
Add in eggs 1 at a time, fold in sifted flour, alternate with melted gula melaka
Sprinkle dessicated coconut on top
Bake 160/170 for 50min (diff oven works differently).
