I know I'm not the only one out there who feels as though when you eat something healthy, you have to reward yourself. Typically with something sweet. So when deciding on what to fill my popsicles with the first thing that came to mind was coconut water. Not just any coconut water though. Harmless Harvest created a coconut water so freakin' pretty that even people like me who, truthfully buys anything pastels/adorable/with cute packaging - regardless of the taste, will want to use it.
The next step was deciding what else to incorporate into my popsicles. From what I told you earlier, you know I was not about to just put fruit in the popsicles. I thought of everything: coconut flakes? too healthy, pretzels? didn't make any sense, Nerd's? loved this idea but they tend to melt their color away & I feared they would do just so in the popsicles. Although now that I'm really thinking about it, that Nerd's idea could be pretty cool! Maybe I'll make that next. Or better yet, you should make it & let me know how it turns out! Finally, I settled with the idea of gummy bears, one of my all-time favorite candies.

Ingredients:
coconut water
gummy bears
Supplies:
Step 1:
Fill the tray 1/4 with water & place in 3-4 gummy bears. Insert popsicle sticks.
Step 2:
Freeze for 1 hour & repeat until entire tray is filled.
Step 3:
Freeze 4-6 hours & pop out of tray.
Step 4:
Enjoy!
