monday's skillet baked ziti was a huge hit! i substituted one pound lean ground beef for the italian sausage and wasn't disappointed. it was so good it instantly went on jason's "good food list"!
as i mentioned last week, i almost forgot that tuesday was cinco de mayo! we eat a lot of mexican around here, so i wanted to make something different. these avocado chicken suiza enchiladas were delicious. this took me about 40 minutes to make - a little long for a weeknight dinner, but oh so worth it.
we had a lot of ziti and enchiladas left, so wednesday was declared leftover night.
my sister, brother in law, and niece were visiting my parents this weekend, so i packed up the boys thursday and headed to grandma & grandpa's for the night. it was really warm outside, so dad grilled cheeseburgers, with beans and salt potatoes. we topped it off with a big chocolate layer cake for my brother in law's birthday. not a bad way to start the summer grilling season!
we headed home friday & jason grilled burgers and zucchini which we gobbled up with roasted potatoes and strawberries.
this weekend felt like the dead of summer. after the lilac parade and a birthday party in 90+ degree heat, we settled for cold turkey sandwiches, chips, and fruit on saturday.
i spent my mother's day sunday doing all the things i love: yoga in the morning, reading a magazine & coffee outside on the patio, a bike ride with winn (we just missed a storm by about 5 min), and dinner with the boys. jason made these black bean enchiladas, baking them in a 400F oven for 45 minutes instead of slow cooking them. they were good & definitely something i'll slow cook this winter.
