Banana Bread from Disney's Animal Kingdom Lodge Recipe

This recipe is for Banana Bread from Disney's Animal Kingdom Lodge. The Animal Kingdom Lodge resort offers several dining options including Jiko - The Cooking Place, Victoria Falls, Boma Flavors of Africa and Mara.

Yield: 3 (5-inch-by-3-inch-by-2-inch) loaves

Ingredients:

• 1 cup butter
• 1 1/4 cup sugar
• 2 eggs
• 2 1/4 cup all-purpose flour
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 3 bananas, mashed
• 1/2 tsp vanilla extract
• 1/2 cups buttermilk
  

Instructions:

1. Lightly spray the inside of 3 aluminum loaf pans.
2. In a small mixer bowl fitted with a paddle, cream the butter with sugar. Add the eggs.
3. Sift the flour, baking powder, baking soda, and salt. Add to the butter mixture. Add the bananas, extract, and buttermilk.
4. Pour batter equally into each loaf pan. Bake in a 340 F oven for about 30 minutes, or until a skewer comes out clean.
