Wow! Very ho liao soft n moist banana cake
Finally found a recipe tat very similar to my 'desirable' taste
Thanks for fb friend's sharing...
Banana Sponge Cake
Ingredient
A
Egg yolks 8
Brown sugar 70g
Self raising flour 200g(cake flour+1 tsp baking powder)
Baking Soda 1/2 tsp
Corn Oil 5 tbsp
Milk 3 tbsp
Water 2 tbsp
Ripe banana 1-3 (mashed)
Vanilla essence 1 tsp (can omit)
B
Egg white 8
Cream of Tartar 1/4 tsp (i din use)
Brown sugar 70g
Preheat ovrn at 180°C
Lined 9-10inch baking pan with baking paper or lightly greased with oil.
Method
1. Ingredient B - Beat eggs white until buble then add in brown sugar in 2 times and continue to beat at medium speed until mix well.then continue to beat at high speed until stiff peak. Cover with any pot lid and set aside.
2. Ingredient B - Sifted flour & baking soda.
3. Mix egg yolks and brown sugar at medium speed until a little bubble. then add in oil, milk, water and banana hand whisk to mix well then beat at medium speed for 2-3 mins.
4. Add in flour in 3 times and mix with hand whisk until mix well..if its a bit dry then add 1 more tbsp water.
5. Fold in 1/3 of the egg white mixture to the ingredient A mixture..fold in ..fold in the rest of the egg white mixture to ingredient A mixture and fold until mix well.. *and take note that do not over mix*
6. Pour the mixture into baking pan and bang the pan few times to remove air in the mixture..
7. Bake at 180°C for 45-55 mins. Monitor the oven closely and temperature for diff oven might be vary..original recipe bake at 170°c 40-50 mins. Put in a cake tester if its clean n clear means the cake is ready 😀😀
